This past summer I found myself purchasing a ton of peaches. Not only for myself and our own personal consumption but also for baking with. Not all of the peaches I purchased, however, were exactly ready when I needed them. In baking, it all depends on what you are baking if you need the peaches ripe or not and having peaches that aren't quite ready can be a real problem.
