While I love cooking there is nothing better than a simple meal packed with flavor. As the season's change and schedules get a tad more hectic anything that streamlines our schedule is a must for our household. During the cooler seasons, we crave hot meals that last and this one is practically perfect.
Growing up in the south comfort food was always king and the myriad of variations is something that I have come to enjoy. This recipe takes two of my favorite dishes and combines them into a deliciously cheesy, stick to your ribs dish that is sure to put a smile on even the coldest day.
In order to complete this dish, you will need the following.
- 1 tbsp olive oil
- 1 lb ground beef extra lean
- 1 large onion chopped
- 3 cloves garlic minced
- 1/4 tsp cayenne pepper
- 1 tsp cumin ground
- 1 tbsp chili powder
- 1 tsp black pepper ground
- 1 tsp salt
- 1 cup black beans drained and rinsed
- 1 cup kidney beans drained and rinsed
- 26 oz diced tomatoes (1 can)
- 4 cups chicken broth low sodium
- 10 oz elbow pasta uncooked
- 2 cups cheddar cheese shredded
- 2 tbsp parsley chopped
