I have a confession to make…I am not a morning person. If it wasn't for the fact that my children needed a ride to school I probably wouldn't roll out of bed until at least 9 am and that would just be for coffee…which I set to brew the night before. I like to take my time and wake up slow. Then again I stay up late, normally on my computer looking at recipes, watching videos about recipes or writing about recipes.
While I do not like getting up in the mornings once I am finally up, usually about an hour or so after I suddenly find myself listening to my stomach growl telling me it needs food and while I love a nice hot breakfast I normally do not have energy for the day until at least noon regardless of what my schedule says I have to do.
So when it comes to breakfast I don't want to spend all morning cooking so I did what I always do…I looked up some awesome ways to have a hot meal in under 10 minutes…and no its not Pop Tarts or frozen Waffles.
Check out the list of ingredients in this first dish.
Ingredients:
- 1 slice bread
- 1 avocado
- 2 cherry tomato, sliced
- 1 egg
Now this will only make one serving so if there are others in your home wanting breakfast I suggest increasing the amounts.
As you guess it we are making Avacado & Egg Toast which is one of my faves! Once you have your ingredients the rest is pretty simple.
Directions:
- Sliced two cherry tomatoes.
- Mash ½ of 1 avocado with salt. (Use the other half for another toast.)
- Prepare bread in a toaster to desired crispiness.
- In a pan, fry an egg sunny side up.
- Assemble the toast by spreading avocado on the toast, then the tomatoes and topping everything with the egg. (*this part may not seem important but I like this arrangement)
Once you have that down you get to chow down and enjoy a fast hot breakfast.
