Delicious Desserts Featuring Pineapple

It's spring and pineapple is in season! Pineapple is great year round, but this time of year they are especially juicy and delicious. There are countless ways to use pineapple in various recipes to take your dietary adventures to the next level! For instance, have you tried pineapple salsa? Or pineapple upside down cake? It's time to think outside of the box!

First you want to choose the perfect fruit. I always recommend buying locally, so hit up your farmer's market to take your pick. I love buying my produce at the farmer's market because I can just ask the grower for the perfect one. I can examine and feel as many fruits as I can, but if I am in doubt, I simply ask.

If you are on your own at the grocery store pineapples are already between 2-4 days old. The stem end of the fruit has the highest sugar content and is the ripest portion. The higher up that yellow color goes, the more evenly a pineapple will be flavored. That color, plus a pleasant, mild pineapple aroma at the base are the best guides to ripeness. The surface of the pineapple should be firm and gently yielding to the touch. Deterioration is marked by a wrinkled skin, a cushiony softness and an aroma of fermentation that suggests vinegar or acetone.

You should always get your pineapple the same day you plan to use it, for the best results!
