Easy To Make Butternut Squash Ravoli

This time of year there are two things that you can be sure of, the first is that pumpkin everything will be everywhere. The second is that butternut squash recipes will start showing up. While we do love pumpkin, its the butternut squash recipes that really make it feel like fall!

This time of year it seems super simple to overdose on all the pumpkins. You cannot walk two feet into a store without seeing some form of pumpkin flavored/scented/decorated product. While it's not upsetting it can get to be a bit much. After all, there is more to fall than pumpkins.

Butternut squash is one of those ingredients that takes a backseat in marketing but never in flavor. Its versatility can be used in everything from desserts to soups and each time it's used it turns out delicious. Aside from making a soup, my next favorite thing is to make butternut squash ravioli. Let's take a look at what we will need.

SQUASH FILLING

  • 2 cups butternut squash, peeled and chopped
  • ½ onion, chopped
  • 3 cloves garlic, peeled
  • 1 tablespoon olive oil
  • salt, to taste
  • pepper, to taste
  • 1 tablespoon brown sugar
  • 2 oz grated parmesan cheese

FRESH PASTA

  • 2 cups flour
  • 4 egg
  • 1 tablespoon olive oil

HAZELNUT BROWN BUTTER SAUCE

  • 5 tablespoons unsalted butter
  • ¼ cup roasted hazelnut, chopped
  • 10 leaves fresh sage
  • salt, to taste
  • 1 lemon, juiced
  • 1 oz grated parmesan cheese

Now let's put it all together. Trust me, it's simpler than you think!
