Mexican Street Corn (Elotes) Is As Popular As Ever

If you have never tasted the amazingness that is Mexican Street Corn then you are missing out.

I first had this snack when I was over at a friends house. He pulled out some corn, a grill, and some seasonings and started prepping and while I stood there trying to figure out what he was doing someone saved me the trouble by explaining Mexican Street Corn.

This delicious snack originated on the streets of Mexico where a corn cob is grilled (I prefer in husk) then smothered with mayonnaise, cotija cheese, and cayenne pepper. I will admit that hearing mayo was smothered on it made me grimace a bit but I had to eat my words when I tried it because it was fantastic!
