One Chef Is Making Waves With His Latest Salad Creation

Just a decade ago, not many of us had heard of kale salad, the trend that at that time was just beginning to sweep the nation thanks to its popularity at the Brooklyn restaurant Franny's. And when we did hear about, thanks to a New York Times article in 2007, not many of us thought it sounded that appealing. Well, fast forward a few years and now kale salad is all the rage. Created by chef Joshua McFadden of Franny's, this salad offers something a little different. McFadden created it because the salad greens available during the winter just weren't very appetizing, and kale was a nice substitute.

Well, now McFadden is at it again, this time devising a delicious new salad that combines bitter greens and melted cheese. Wow! We think that sounds like one heck of a hearty meal, and that even people who don't usually like salad will appreciate it. It's from his new cookbook “Six Seasons,” and it's a complex mixture of texture and flavor. Yum! This salad is ideal both as a side dish and as a mean in itself.
