Oven Baked Meatball Sandwich

If you know an Italian you know they are serious about their food! A classic Italian dish is meatballs, how do you say no to meatballs? Recently my brother made a giant batch the delightful morsels and sent me home with enough to feed a army. I thought to myself, what on earth am I going to do with all of them, I most certainly did not want them going to waste. Thus the meatball sandwich. They work perfect for a hot lunch or as a dinner, your choice!

Don't fret, even if you don't have homemade meatballs the frozen ones work the same and are equally as delicious.

Fried Egg and Avocado Sandwich

At first thought this sounds a little strange, but don't shake it until you make it! Personally I find a plain fried egg sandwich a little boring and it leaves me searching for more. Being the true California girl, I always have avocados on hand. It makes the perfect combination with egg on your sandwich.

They are great for any meal, even breakfast. They are packed with protein that will leave you full of energy and full to the brim!

If you have ever been to Hawaii you will know that they LOVE spam. As random as this may be, they really are on to something. As a broke college student I quickly learned to love this miracle in a can. I could buy a lot of it and get a little crazy with it. Don't worry, you don't have to be a struggling student or a sun kissed Hawaiian to enjoy this simple sandwich.

Growing up one of my absolute favorite dinners was when Mom made pastrami sandwiches. My Mom is a outstanding cook so naturally my entire life I have been positive that she had some divine trick to making her pastrami. Much to my surprise (and my Husband's benefit) I recently discovered that the pastrami sandwich is one of the quickest and satisfying meals to make! They are great to make when you are looking for low maintenance meal that your family is sure to devour every time.

Grilled Vegetable and Mozzarella Sandwich

Everyone has a vegetarian in their life. Mine happens to be my childhood best friend whom is prone to random stops at my house. As any good friend does her first stop is in my kitchen to raid my pantry. I have learned there are certain stand-bys to always have on hand so she can get her grub on. This sandwich is one of her favorites and much to my surprise is a pallet of flavors!

It is a very simple sandwich and you can add any of your favorite veggies to make it custom made.
