Sweet Potatoes Are Great, But A Sweet Potato Soufflé Is Really Something Special

Before you get started, make sure you have the following ingredients ready to put together. I used all fresh ingredients to make this. You can use potatoes out of a can however, if you peel and dice them fresh it tastes a heck of a lot better.

Here Is What You Need:

  • 6 sweet potatoes

  • 1 cup white sugar

  • 1/2 cup milk

  • 1/2 cup melted butter

  • 1 teaspoon vanilla extract

  • 2 eggs, beaten

  • 1/2 teaspoon salt

  • 1 cup dark brown sugar

  • 1/3 cup all-purpose flour

  • 1/3 cup melted butter

  • 1 cup chopped pecans

You'll also need a little bit of time to prepare the meal before letting it bake in the oven.

  1. First, allow the potatoes to sit in one inch of boiling water for 20 minutes until tender. Drain and remove the skins. Now you can preheat your oven to 350 degrees while you prepare the rest of the dish.
  2. Place potatoes in a mixing bowl and with an electric mixer, beat on low speed until potatoes begin to break up. Increase speed to medium high and blend until smooth.
  3. Add the sugar, milk, butter, vanilla, eggs and salt, and continue mixing on low, then pour the mixture into your casserole dishes. Before you place it in the oven, create the toppings using the brown sugar, flour, butter and pecans, and spread it on top of the sweet potatoes.

Finished!

Let the oven do it's thing for 40 minutes. It'll be tempting, but make sure you let it cool for a while before you dig in!
