Ingredients To Gather:

1 large onion, sliced or coarsely chopped

1 tablespoon vegetable oil

1 boneless pork loin roast, about 2 to 3 pounds (not tenderloin)

For The Sauce:

1/2 cup barbecue sauce

2 tablespoons brown sugar, light or dark

1 tablespoon cider vinegar

1 tablespoon soy sauce, low sodium

1/2 teaspoon ground ginger

1/2 teaspoon minced garlic

1/4 teaspoon ground black pepper
Directions To Follow:
Start by heating vegetable oil over medium heat in a large skillet, and then add onion and cook for 3 minutes. Take the netting off of the roast, and then salt and pepper the meat. Add all of this to the onion and then brown on all sides. This usually takes between 8 and 10 minutes. Next, place the roast and the onions in the crock pot, and then combine all of the ingredients for the sauce and pour over the roast. After this, cover and cook in the crock pot for between 6 and 8 hours. When it's done, place the roast on a plate or platter, and then skim any extra fat from the sauce. Pour the extra sauce into the saucepan and then bring to a boil. Stir occasionally for about 4 minutes or until the sauce thickens and is reduced. Finally, place the roast and the sauce back into the crock pot to keep it warm until you're ready to serve.
