The Perfect “Valentine” Top Loin – Or “Anytime” Really :)

Valentine's was just around the corner and I don't know about you but sometimes I just don't like going out to eat, waiting in the line and then being disappointed after an hour wait because the food is not satisfying.

Why not cook a favorite meal or love infused meal instead? I have come up with a great recipe.

How sweet it is to be loved by you…especially when you serve your family with a Valentine's Day meal.

Makes 6 Servings

Let's get cooking!

Shopping list:

  • 3 tablespoons olive oil, (divided )
  • 1 pound sliced baby portobello mushrooms
  • 1 shallot, finely chopped
  • 4 tablespoons chopped red onion
  • 2 garlic cloves, minced
  • 2 teaspoons minced fresh rosemary
  • 1 cup roasted sweet red peppers, cut into strips
  • 1/2 cup dry red wine or beef broth
  • 1/4 teaspoon salt (optional)
  • 1/4 teaspoon coarsely ground pepper
  • 6 boneless beef top loin steaks (8 ounces each) (you can use strip steak as well)
  • 1 focaccia bread (12 ounces), cut into quarters
  • 2/3 cup Asiago cheese shredded

Directions

  1. In a large skillet, cook steaks in 2 tablespoons oil over medium heat for 5-6 minutes on each side or until meat reaches desired tenderness. Remove and keep warm.
  2. In the same skillet, saute the mushrooms, shallot and onion in remaining oil. Add garlic and rosemary; saute 1-2 minutes longer. Stir in the red peppers, wine, salt and pepper; heat through.
  3. Place focaccia on serving plates; top each with a steak and 1/2 cup mushroom mixture. Sprinkle with olives.

There you have it… an inexpensive dinner that tastes superb and you don't have to fight the crowds!
