This recipe makes enough for about thirty cupcakes but if you need more, you always double the ingredients. They take a few minutes to prepare and about twenty-two to twenty-five minutes to bake. They will look so good, you won't be able to resist trying one!

The Ingredients To Gather:
Cupcake:
2 cups sugar
1¾ cups flour
¾ cup HERSHEY'S Cocoa
1½ teaspoons baking powder
1½ teaspoons baking soda1 teaspoon salt
2 eggs
1 cup milk
½ cup canola oil
2 teaspoons vanilla extract
1 cup boiling water
Trees:
30 pretzel sticks
1¼ cup green candy melts
non-pareil sprinkles
Frosting:
½ cup butter
6 oz cream cheese or light cream cheese
2 tsp vanilla
4 cups powdered sugar
2½ cups shredded coconut
The Step By Step Directions To Follow:
Preheat oven to 350°F.
Line 30 muffin cups with cupcake liners.
Whisk sugar, flour, cocoa, baking powder, baking soda, salt.
Add eggs, milk, oil, vanilla to flour mixture. Beat with mixer on medium speed for 2 minutes.
Add boiling water, stir until well combined.
Scoop batter into muffin cups, filling ⅔ full with batter. Bake 22 – 25 minutes.
For the trees, melt candy melts according to package directions. Transfer mixture to piping bag.
Place pretzel sticks on wax paper or parchment paper-lined baking sheets, spacing them 2 – 3 inches apart. Pipe the candy melts over the pretzel sticks in the shape of a tree then immediately top the trees with sprinkles. Allow trees to sit until trees have fully set.

To Make Your Frosting:
Cream your butter, cream cheese until it is combined. Then mix in your vanilla extract, powdered sugar, beating them until just mixed.
Put frosting on each of your cupcakes then top with the coconut. Then slowly take the mini trees off the wax paper and insert your trees onto the top of each cupcake.
