These Coconut Cloud Cupcakes Make The Perfect Treat For Valentine’s Day

This recipe makes about eighteen cupcakes, but if you need more for your party, you can just double the ingredients. They take just a few minutes to prepare and about sixteen to eighteen minutes to bake but we have to warn you they will look so good when they are done, you'll want to dig right in!

The Ingredients To Gather:

3/4 cup unsalted butter
1 1/3 cup superfine sugar
4  eggs
2 cups plus 1 tablespoon flour
3/4 cup unsweetened cocoa powder
3/4 teaspoon baking soda
1/4 teaspoon salt
1 cup hot strong coffee
1 cup heavy whipping cream
2 teaspoons vanilla extract
FLUFF FROSTING

1 cup plus 3 tablespoons superfine sugar
1/2 cup light corn syrup
1/3 cup plus 1 tablespoon water
5/8 cup  egg whites
1 teaspoon vanilla
pink icing color
unsweetened coconut
heart candies (optional)

The Step By Step Directions To Follow:

 Preheat oven to 350 degrees Fahrenheit, line cupcake pans with paper liners.
Sift flour, cocoa powder, baking soda, salt in  bowl twice, set aside.
Cream  butter, sugar together until light, fluffy, about six minutes.
Add  eggs, one at a time, mixing  after each addition,  not more than 30 seconds. Add vanilla when adding  last egg.
Add half of  flour mixture to  butter mixture,  add  hot coffee, beating  until incorporated. Add remaining flour mixture,  heavy cream. Mix on medium until just combined, about a minute.
Scoop batter into baking cups so that each cup is about 3/4 full. Bake 16-18 minutes. Remove from pans, cool.
Combine 1 cup sugar, light corn syrup,  water in  saucepan fitted with  candy thermometer. Stir until completely dissolved, let  heat over medium-low heat until temperature reaches 240 degrees F.
Add egg whites to stand mixer, mix on low speed; as soon as it begins to foam, add  three tablespoons of sugar, one at a time.

The Additional Directions To Follow:

Add your sugar syrup into your egg whites gently, trying to aim for the side of your bowl. Once your syrup is in, switch your mixer to medium high and then whisk your frosting until it is thick, looks glossy and is in a  firm peak. Then mix in the vanilla and a few drops of your food coloring, stir well.

When you are ready to decorate, make sure you have a decorator bag with a large round tip on it filled with your frosting. Then make some swirls on the top of each of your cupcakes and then press each side and the top of your bowl with coconut. If the top of the cupcake isn't quite rounded, you can use the palm of your hands. Finally, put candy hearts on each cupcake if you wish.
