These One-Pan Baked Pork Chops Have An Unusual Seasoning That Gives Them Some Serious Flavor

Here's everything you need for these easy baked pork chops. For best results, use pork chops of the same approximate size and thickness so they'll cook in the same amount of time.

Let's Get Started… 

Ingredients To Gather:

  • 2 (1-inch-thick) bone-in pork loin chops
  • 1 teaspoon olive oil
  • Kosher salt
  • Freshly ground black pepper
  • 1/2 cup dry white wine
  • 3 tablespoons unsalted butter, cut into small pieces and at room temperature
  • 2 teaspoons finely chopped fresh Italian parsley leaves
  • 1 1/2 teaspoons Dijon mustard

Directions To Follow:

  1. Heat the oven to 400°F and arrange a rack in the middle.
  2. Pat the pork chops dry with a paper towel and rub them all over with the oil. Season both sides generously with salt and pepper.
  3. Heat a large oven-safe frying pan over medium-high heat until several drops of water sprinkled in the pan skitter around and converge into one big drop or the pan is smoking, about 3 to 4 minutes.
  4. Place the chops in the pan and cook undisturbed until they’re golden brown on the bottom, about 3 minutes.
  5. Flip the chops over and immediately place the pan in the oven. Bake until the chops are golden brown on the second side and the temperature registers 145°F on an instant-read thermometer inserted into the thickest part of each chop, about 7 to 10 minutes.

Next, remove the pan from the oven and place it on the stove, and then put the pork chops on a plate use foil to loosely tent them. Pour off and discard any fat left in the pan, and then add the wine and cook over medium-high heat, scraping off any brown bits of the meat that have stuck to the pan. Cook for about 3 minutes or until the wine is reduced by half and then remove from the heat. Next, add the butter one piece at a time using a whisk, and wait for each piece to melt before adding the next piece. Once you've added all of the butter and the sauce has thickened, use a whisk to add the parsley and mustard and then season with salt and pepper to taste. Divide the sauce evenly between the two pork chops and then serve.
