This Buttermilk Fried Chicken Uses a Special Brine That Adds Flavor and Texture

There are lots of ways to make fried chicken, and we have to admit, we've tried many of them! No matter how good they are, however, none of them quite compare to this rosemary-brined buttermilk chicken, either in terms of taste or texture. The overall quality of this fried chicken is simply amazing, thanks in part to the quick and easy rosemary and lemon brine you marinate the chicken in first. This brine enhances the flavor of the chicken and keeps it moist.

The buttermilk batter also keeps the chicken nice and crispy, even if you leave it in the oven for a couple of hours while waiting for your guests. To make it even crispier, we like to finish the chicken in the oven at 250 degrees Fahrenheit, particularly when making wings, thighs and legs. This helps crisp up the chicken and make it more tender. It also means you don't have to serve the chicken immediately. We like this because we can make the chicken a bit in advance of when we're expecting our guests, so we know nothing will go wrong at the last minute.
