This Curried Corn Soup Is a Spicy Version of Our Favorite Comfort Food

Make This Hearty Soup In Less Than Half an Hour!

We're big fans of corn soup, because it doesn't require a whole lot of fancy or expensive ingredients, and it's incredibly easy to make. For a basic version, all you have to do is remove the kernels from a few ears of corn, and simmer it along with some chopped and diced veggies and vegetable stock and some coconut milk. In about 10 minutes you have a delicious and hearty soup!

As delicious as this basic version is, it's also easy to dress it up and make several other versions, including this one that really brings on the heat! This curried coconut corn soup uses cilantro, onion, coriander, cumin, turmeric, paprika, lime, coconut milk, and salt and pepper. Wow! If you like spicy foods, you'll love this soup.
