This Egg Salad Has An Unexpected Ingredient That Makes It Extra Special

We'll Never Have Traditional Egg Salad Again!

Every cook needs one go-to dish that they can make quickly and that works as a filling for sandwiches, as a side dish or all by itself. Bonus points if it's ideal for for breakfast, lunch, dinner and even a snack. For us, this is our favorite avocado egg salad, which is loaded not only with flavor but also with plenty of protein and nutrients. Yum!

Despite being called avocado egg salad, this recipe is not quite like the egg salad you're probably used to. For one, there's no mayo! Instead, avocado is used as the base, and we have to say, it really tastes amazing! There's also plenty of flavor, thanks to seasonings that include dill, parsley, salt, lemon and olive oil. The avocado and eggs really complement each other, and this is the perfect thing to slather on a bagel for a quick and easy breakfast or lunch, or maybe an afternoon snack. We like to keep some on hand in the fridge so we can make something quickly when we need to refuel.
