This Classic Sauce is Something Every Cook Should Know
A bechamel sauce is one of those basic recipes that every cook needs in their repertoire. Not only is it delicious, it's also incredibly versatile. Use it as a base for souffles, or to hold casseroles together, or just pour it generously over your favorite pasta for a rich and hearty meal. Also known as white sauce, it's a classic French “mother sauce” that can be used to make gravies and as a foundation for a wide range of dishes.
It's also a lot easier to make than most people think, although you do have to watch it closely because it can transform from a nice white sauce to brown really quickly. Also, you can customize this bechamel to get just the consistency you want. If you want it thinner, just add more milk. This recipe makes about 2 cups of bechamel, which should be plenty for any dish.
