This Smashed Brunch Burger Might Just Make Us All Want To Eat Brunch More Often

This recipe makes enough for about four servings but if you want more, you can just double the ingredients. It takes about thirty-five minutes total to prepare and cook. It will smell so good, you won't want to wait to dig in!

The Ingredients To Gather Are:

8 slices bacon
 Jalapeño Hollandaise:
1  egg yolk
1 teaspoon water
1 teaspoon fresh juice from 1 lime
Pinch of kosher salt
1 stick unsalted butter
1 jalapeño
 Smashed Burgers and to Serve:
4 English muffins
1 pound ground beef chuck, divided into 8 balls
Kosher salt and  ground black pepper
4 slices Colby-Jack cheese
1/4 avocado
2 tablespoons unsalted butter
4 eggs

The Step By Step Directions To Follow:

Line  rimmed baking sheet with foil, arrange bacon on top in  single layer. Bake  16 minutes, rotating baking sheet once front to back during cooking. Place bacon on paper towel–lined plate, set aside.
In bottom ofcontainer that just fits  head of  immersion blender, combine  egg yolk, water, lime juice, pinch of salt. In  saucepan over high heat, melt  butter. Swirl  saucepan constantly until butter is no longer foaming. Pour butter into  liquid measuring cup.
With  blender running,  slowly pour in  hot butter. Continue pouring until all of  butter has been added. Add half of  jalapeño; reserve  remaining jalapeño to garnish burgers. Keep blending until smooth, creamy. Transfer to lidded pot, keep in warm place until ready to use.
Arrange bacon on  bottom halves of English muffins, set aside. Preheat  sauté pan or skillet over high heat. Place 2 balls of beef in  pan at a time, smash down with two stiff metal spatulas. Press firmly to flatten.

The Additional Directions To Follow:

Make sure to add a good amount of salt and pepper to each burger. Then allow to cook until the bottom of each burger is browned or for approximately forty-five seconds or so. Then flip each burger and put some cheese over top of one of your burgers. Then, place your smashed burger onto one of your muffins that should already have bacon on it. Do this until all of your burgers are done. Then, put an avocado slice on every burger.

Then, in your skillet placed over medium heat, melt the remaining two tablespoons of butter. Next, crack each one of your eggs into your skillet and allow to fry making sure not to touch them until they reach the desired level of doneness. Put the eggs on over top of your avocado, and put this Hollandaise sauce over top of your eggs, add some pepper and the rest of the jalapeno.
