Traditional Persian Fesenjoon

Instead of trying the traditional route with your stews consider trying an Iranian one for dinner.

Fesenjoon which is one of my favorite dishes of all time consists of Walnuts (a great source of protein) and pomegranates. Now instead of shying away and having a closed mind I urge you to reconsider. Pomegranates have a rich, robust flavor and the Walnuts not only add texture but they also have a richness to them.

This dish can either be served hot or cold and over time the flavors marinate. You can have this dish in your fridge for over a week and it will still be delicious.

You can also make this completely vegetarian by not adding chicken and serving just over Jasmine Rice. Do not try and substitute regular rice for Jasmine because it does not work.
