Vegan Coconut Cupcakes

If Cupcakes are on the dessert menu for today then please serve me two! There is something irresistible about a little-mini cake that you can hold in your hand and consume in two or three delicious, satisfying bites. I always have cupcakes for my birthday, instead of an actual cake. My mom usually will make one cupcake for each year of my existence. For most of my life I only consumed chocolate cupcakes, but over the years my taste palette has expanded, leading me to a vast spectrum of possibilities and delicious options. Now that the weather is warming up, I am craving a light cupcake, one that goes well with ice tea or a refreshing beverage. On one particularly sunny day, I was slathering on some sunscreen and got a whiff of Coconut. Then, it hit me. Coconut Cupcakes!! Abandoning my beach plans, I began to execute my plan of action.

The results were these incredibly moist, dense, delicious cupcakes. Not being one to do things half-way, I also made a coconut frosting!
