This Is No Ordinary Salad!

There are a few dishes that just absolutely exemplify the best of what springtime has to offer. This spring salad is certainly one of those, and we know spring is here when we see it start to appear on menus at all of our favorite restaurants. This is no plain old salad however; instead, it's a hearty meal that's ideal for lunch, brunch or even dinner. That's because it starts with a mix of blanched veggies that include fava beans, peas, asparagus, broccolini and shallots, which is topped with a soft-boiled eggs that's been deep fried and then covered in savory bread crumbs. Wow!

We like that this dish has something for everyone. The veggie lover will adore the succulent, tender mix of spring vegetables, while people who like fried food will drool over the deep fried egg. Plus, while the outside of the egg is crispy and breaded, the inside is still soft and runny, adding tons of flavor to this already luscious salad. Yum!
