Craving A Hamburger But Hate The Empty Calories? Make This Savory, Hearty Soup Instead

This hearty hamburger soup recipe makes enough for about twelve servings but you can cut it in half if needed. It takes about fifteen minutes to prepare and about twenty minutes to simmer.

The Ingredients To Gather:

  • 2-1/2 pounds Ground Chuck
  • 1 Onion
  • 2 stalks Celery
  • 3 cloves Garlic
  • 1  Can Whole Tomatoes
  • 3 cups Beef Stock Or Beef Broth, Plus More As Needed
  • 1  Yellow Bell Pepper
  • 1  Red Bell Pepper
  • 1 Green Bell Pepper
  • 4  Carrots
  • 5  Red Potatoes
  • 3 Tablespoons Tomato Paste
  • 1/2 teaspoon Kosher Salt (more To Taste)
  • 1/2 teaspoon Black Pepper, More To Taste
  • 2 teaspoons  Parsley Flakes
  • 1/2 teaspoon Oregano
  • 1/4 teaspoon Cayenne Pepper (more To Taste)

The Step By Step Directions To Follow:

  1. In pot over medium-high heat, brown  meat with  onion, celery, garlic. Remove pot from heat, drain off as much fat as you can, discard fat.
  2. Return  pot to  heat,  add rest of the ingredients. Stir to combine, bring to boil. Reduce  heat, cover pot,  simmer  soup for 15-20 more minutes, until potatoes are tender but not overly mushy.
  3. Soup should be somewhat thick, but if you'd like it to be more “soupy,” add 1 to 2 cups more broth OR hot water and heat through. Taste, adjust seasonings.
