
Here's everything you need for this scrumptious brown sugar chicken. This recipe makes four servings. You can serve this as a stand alone dish if you want. The sauce alone is perfect to pour over the chicken or some green beans.

Ingredients To Gather:
- 4 chicken quarters
- Salt and pepper
- 2 tablespoons butter
- 2 tablespoons olive oil
- 1 tablespoon chopped shallots
- 3 cloves chopped garlic
- 3/4 cup chicken stock or broth
- 1 cup low-sodium soy sauce
- 2 cups brown sugar
- 1 heaping tablespoon fresh ginger, peeled and chopped
Directions To Follow:
Start by preheating the oven to 350 degrees Fahrenheit, and then heating a Dutch oven over medium-high or high heat. Add butter and olive oil to the Dutch oven, apply a generous amount of salt and pepper to the chicken, and then put the chicken in the pot and browning it for about 2 minutes on each side or until it's crispy and has a golden brown color. When the chicken is done, put it on a plate and turn the heat down to medium, and then add the shallots and garlic to the pot. Next, deglaze the pot with stock, and scrape down the sides of the pot to ensure the flavor and seasoning gets into the broth. Next, add the soy sauce, brown sugar and ginger and simmer the sauce for between 5 and 10 minutes. Put the chicken back into the pot, cover, and then bake for between 45 minutes and 1 hour, or until the chicken is thoroughly cooked all the way through.

Sounds delicious, doesn't it? We really like this chicken served with some sauteed broccolini and Thai jasmine rice. If you choose to serve it with the rice, cook the rice with light organic coconut milk instead of water.
