Leaner meats, like chicken breast, can get tough when cooked for a long time, so opt for inexpensive, fattier meats that will break down and get tender, like shoulder cuts.

Other mistakes include not using the right cook of meat (for example, chicken breast can get tough in the slow cooker, but cheaper, fattier meats like shoulder cuts break down and get tender); adding dairy too soon in the cooking process, which causes it to curdle; adding too much liquid, which can spill over; adding a lot of alcohol, which doesn't evaporate the way it does on the stovetop; cooking chicken with the skin on, which can get gelatinous; and not timing the food properly.

Damn!

We've made one or two of these mistakes ourselves, but after reading this list we plan to completely change the way we use our slow cooker. We can't wait to see how much better our food tastes after correcting these very common mistakes.
