With my schedule packed full of taking the kids to school, cleaning the house, working a full time job, have a social life, etc. I need things to make life a little easier. Like a life filled with endless casserole recipes. This one I particularly love making for the family. There are numerous reasons why, but my main squeeze, is the amount of crunch this casserole packs. Often times, casseroles can be a big pile of mush on your plate. Sure it tastes good, and you'll probably have seconds, but texture in your food is a huge part of enjoying it — at least in my book. The crunchy Doritos layer in this casserole adds just what you need to take your oven baked creation to the next level. I also love that addition of the sweet corn to the recipe! This adds a little texture variety as well, but also breaks up the richness of the cheese. It's almost like getting away with having chips and dip for dinner, but definitely much more refined … at least that's what I tell myself.

Another great thing to love about this dish, is that you don't have to worry about monitoring your kids while they eat during dinner. They will guaranteed eat all of it, and most likely ask for seconds as well. With the addition of the corn you know they are least getting one serving of vegetables in this meal as well!
