As The Huffington Post notes, dairy producers have traditionally used a pasteurization method called UHT, which kills off enough pathogens to make the milk safe to consume. Milk stays fresh for 15 days with this method.
However, a new method called low-temperature, short-time, of LTST, can extend the life of milk for several weeks. This is because LTST adds another step to the pasteurization process that can kill 99 percent of the bacteria left behind after conventional pasteurization methods.
