
When my family moved to New York, my home state, for a year, one of our biggest challenges was finding good Mexican food. We traveled from borough to borough and eventually we managed to find some good places, but nothing compared to the Mexican food spots of Southern California.
While we were there I made a lot of dishes at home. What’s wonderful about these recipes is that they call for common ingredients, so if you aren’t close to the border like we are now, you can still find all the ingredients in your local store.
Mexican food, aside from being amazingly delicious, is also easy to prepare. When I first started cooking I went straight to Mexican, first because it is my husband’s all time favorite and second because in reading the instructions I knew I could pull the recipes off.
Now fast-forward to today and these Mexican dishes are still on my recipe list! They are extra great when cooking for a crowd, which often means differing tastes.
