It's not often that we come across a cake that's decadent and delicious, the perfect way to satisfy your sweet tooth or indulge in a well-deserved treat, while also being simple in both its ingredients and its process. However, this amazing carrot cake with cream cheese frosting proves that sometimes simple is best! This cake is really easy to make, and is incredibly soft and moist, and so tender it practically melts in your mouth!

This is a pretty basic carrot cake recipe, with no fancy ingredients or added toppings or fillings, which we like because the smooth and rich flavor of the cake is unbelievably mouthwatering. To top it all off, there's a smooth, tangy cream cheese frosting that enhances and complements the flavor of the carrot cake perfectly! This cake keeps well in the refrigerator, so we often make it a day ahead of time, complete with frosting, and then pop it in the fridge so that it's ready and waiting for us!
