Ziti has got to be one of our all-time favorite pasta dishes, especially the baked version. It's just so savory and hearty, as well as being loaded with flavor. Yum! When you think of baked ziti, you probably think of the traditional rich and tangy version smothered in tomato sauce. However, we recently discovered a light and fresh version that's perfect for summer. This version uses fresh, sweet corn, tangy tomato and rich and creamy ricotta cheese for a summertime version of this beloved dish.

It's a little like an alfredo pasta thanks to the rich and creamy ricotta and Parmesan cheeses, along with a bit of garlic to make it even more flavorful. Mix that together and you can amazingly smooth and satisfying sauce that coats each piece of ziti beautifully. Plus, this ziti is the ideal way to showcase all of the season's most delicious vegetables.
