When I think of stuffed vegetables I usually think along the lines of acorn squash stuffed with apples and cinnamon. I'm not sure why I never thought of stuffing an eggplant before!
I absolutely love eggplant, but I don't think I've ever had it with pork, rice and cheese before! Well, there's a first time for everything, and I'm glad there is. This recipe looks absolutely amazing. I might have to run out and grab the ingredients right now!
The best part is, though it looks incredible, it doesn't really take all that much to make. And most of the time will be spent staring at the oven timer waiting for everything to cook!
