A Traditional Recipe For Chicken Enchiladas But Without The Messy Assembly

When I made this I just went to the store and bought a Rotisserie Chicken because I knew that the flavors were already cooked in and I could just throw everything in the oven.

I didn't use as much cheese as it calls for because I wanted it to be a little healthier but that is up to you.

Here Are The List Of Ingredients:

  • 2 cups diced cooked chicken

  • 3 cups shredded Monterey Jack cheese blend

  • 1 can (4.5 oz) chopped green chilies

  • 1 package flour tortillas

  • 1 can (16 oz) refried beans

  • 1 can (19 oz) enchilada sauce

  • 4 medium green onions, sliced

The Full List Of Directions:

1. Heat oven to 350°F.
2. Spray 13×9-inch dish with oil.
3. Mix chicken 1½ cups of cheese and the chilies
4. Place a few spoonfuls of enchilada sauce in the bottom of the baking dish.
5. Layer 3 tortillas in baking dish.
6. Spread about half of the beans over tortillas.
7. Top with about half of the chicken mixture and half of the enchilada sauce.
8. Layer with 3 more tortillas and remaining beans and chicken mixture.
9. Place remaining 2 tortillas over chicken mixture, overlapping slightly.
10. Pour remaining enchilada sauce over top.
11. Sprinkle with remaining cheese.
12. Bake 45-55 minutes.

OMG this is absolutely delicious and super simple to make. I really liked how I could just omit the chicken and use the vegetables for a vegetarian enchilada casserole.
