
Here's everything for these savory Cajun Bacon smashed potatoes. Using the reserved bacon grease gives these potatoes a really potent flavor!
Ingredients to Gather
6 slices Bourbon Street Cajun Bacon
2 tbsp reserved bacon fat
4 lbs russet potatoes, quartered. Do not peel.
1 cup milk
2 tbsp (1/4 stick) butter
2 tbsp chopped fresh chives
salt & pepper to taste
Directions to Follow
Start by frying the bacon over medium-low heat in a large skillet, cooking until the bacon gets crispy. When it's done, place on paper towels to drain, and then crumble it and set aside, reserving 2 tbsp. of the bacon fat. Next, place the potatoes in a large pot of salted water and then boil until tender and then drain well. Now, place the potatoes back in the pot and mash, and then add the milk, butter and reserved bacon fat and mash the potatoes again. Finally, add chives and season with salt and pepper to taste, then top with bacon and serve.
