Beef Brisket with Chipotle Tomatillo Sauce

Let's Get Started… 

Things You Will Need:

2 (11 ounce) cans whole tomatillos, drained

  • 1 (7 ounce) can chipotle peppers in adobo sauce
  • 1 (8 ounce) can tomato sauce
  • 1 cup water
  • 2 teaspoons salt
  • 1 teaspoon brown sugar
  • 2 tablespoons olive oil
  • 1 yellow onion, chopped
  • 4 cloves garlic, chopped
  • 1 (3 pound) beef brisket

How To Prepare:

  1. Start off by placing your tomatillos, chipotle peppers, tomato sauce, water, salt and brown sugar into a food processor, where you will mix tougher and combine until your product has reached a smooth consistency. Go ahead and set the mixture aside, you'll use this later on in the recipe.
  2. Go ahead and get out your handy dandy pressure cooker. Start the process by placing your onion and oil into the pot and let the onions cook until they are starting to turn translucent. Then you'll go ahead and sear your meat on all sides, followed by pouring your tomatillo mixture over top. Go ahead and let the sauce heat to a boil, then close the lid on your pressure cooker. When you see the pressure rising, set it to medium pressure and let your brisket cook about an hour and fifteen minutes.
  3. Once your meat is cooked, let the pressure reduce in your cooker naturally. Under no circumstances should you move forward with the quick release option. Serve brisket immediately with sauce.

Note: This brisket is absolutely amazing. We simply can't get enough of it. My family likes to enjoy with a fresh green salad and crusty bread to soak up all of the juices.
