The Ingredients To Gather:
- 5 corn tortillas
- 2 tbsp. olive oil
- 4 bell peppers
- 1 onion
- 2 lb. skirt steak
- 1/2 tsp. red pepper flakes
- 1 tsp. cumin
- 1 tsp. chili powder
- 1 c. Mexican blend cheese
- Salt and pepper
- Juice of one lime
The Step By Step Directions To Follow:
- Preheat oven to 350 degrees F.
- Toss tortillas in tablespoon of olive oil, salt.
- Bake 10 minutes.
- Sauté peppers, onions, 5 minutes.
- Add steak, sear all sides.
The Additional Step By Step Directions To Follow:
- After steak is seared, sprinkle with salt and pepper.
- Add in the red pepper flakes, cumin, and the chili powder.
- Cook everything until the meat is completely cooked.
- Add about half of the tortilla strips, allow the cheese to begin to melt.
- Squeeze lime juice over the top.
