Tired Of Chicken & Rice? This Southwestern Recipe Kicks Things Up A Notch Or Two!

Your family will think you spent hours in the kitchen preparing this dish. Easy to make with many ingredients you probably already have on hand. After the compliments, they will be asking for you to make it again next week.

Ingredients You Need:
  • 2 Large chicken breasts, cubed
  • 1 medium onion, chopped
  • 1 Green Pepper, chopped
  • ½ Cup of corn
  • ¾ Cup of Chicken Stock
  • 1 Cup of long grain rice, uncooked
  • 1 Jar of Salsa, 15 oz
  • 1 Cup of Shredded Cheese
  • 1 – 2 Teaspoons of Olive Oil
  • Green Onions, sliced
  • Salt + Pepper to taste
Directions To Prepare:
  1. In a large skillet over medium high heat, add the oil
  2. When the oil is hot, add the cubed chicken and brown on both sides. Season with salt and pepper
  3. Add the peppers and onions. Cook until softened. 2 minutes
  4. Pour in the stock and salsa. Cook until mixture starts to boil
  5. Add the rice and mix
  6. Cover with lid and reduce heat to low
  7. Cook until the rice is done and liquid has evaporated. About 15 minutes
  8. Remove from heat and add the corn. Mix and check for seasoning
  9. Sprinkle in the cheese and green onions

Enjoy!

You can add a little bit of corn, fresh or canned to the mix and for a zestier flavor you can throw in a few lemon wedges and garlic. Let us know how it turns out!
