Many of us have been taught to always go by the dates on the packages when we need to determine if a food is still okay to eat.
So, when we have an almost full carton of eggs in the fridge but that date says that they are now expired, we feel like we should just toss them out and buy brand new eggs instead. When I buy eggs, I always rub my finger across them to feel for bumps. The bumps are very fresh eggs. Smooth eggs are older eggs.

I only buy 6 at a time may pay more but I don’t use that many for one person

The week-end of july 4th Ingles had eggs for fifty cents a dozen w/expiration date July 4th. I bought four dozen and they were fine. Put your egg in a bowl to check that it is not bad. Great for baking and etc. When they are cheap, I stock up on them.

Most of the dates you see on food products are the sell by date but you do sometimes see a use by date that indicates the time period in which it will taste best. Throwing away food that has been properly stored based on the sell by date is a total waste of money.

I learned as a long distance sailor that eggs will easily keep for ammonthbor so even at room temperature. If you coat them in something to replace the bloom that gets washed off you can prevent oxygen mgration through the shell, things like mineral oil or the old standby isinglass have long been used. If you do that AND refrigerate you can get 9-12 MONTHS. Sell by dates in most cases are simply CYA measures by vendors rather than sanity (cover your$#%&!@*.

This says that stores put expiration date on them to know how long to sell them. Eggs are good 3 to 5/weeks after expired date. Just keep refrigerated..

Boil your close dated or recently expired eggs and make egg salad or deviled eggs. They peel very easily when they are not as fresh.
Then you should just be careful of what you buy.
He is right. Expiration is actually store shelf date. When it has to be sold or removed from the shelf so they can restock.
If you only knew how long they sit at the chicken houses before they are picked up. Truck come to our farm once a week to pick up eggs so theyve already set for a week some of em. How’s that for fresh

I’ll use eggs a couple of weeks after the expiration date except when I’m using them in a mousse which calls for raw eggs and is not cooked.
