
Ingredients:
5 (or more) Large Russet Potatoes.
10 to 12 Ounces of Mexican Chorizo, with Casings Removed.
1 Cup of Mexican Blend Cheese.
Now that we have our ingredients, the rest is easy…
Start by peeling and dicing your potatoes in to 1/4 cubes. While doing this, bring 8 to 10 cups of water to a rolling boil in a large pot. Add diced potatoes and cook until they are just about tender. I'd say 10 to 15 minutes. Drain pot and let cool.
While your potatoes are boiling, crumble your Chorizo into a large skillet. Cook on medium to high heat until no more pink remains. Generally around 15 minutes. I prefer to cook my Chorizo until it starting to get a little crispy. You will have some oil left in the pan, be sure not to drain this when your Chorizo is done.
Next step is to add your cooked potatoes to the skillet with the crispy Chorizo, and mix everything together. Preheat your oven to 325 degrees, and cover your Papas Con Chorizo with a layer of Mexican cheese blend. Carefully place your skillet in the oven and cook until the cheese has begun to melt.
Side Note:
As with any recipe, remember that you can always modify the ingredients and amounts to handle any potential dinning scenario. I know that when word gets around that I'm making Papas Con Chorizo, it seems like friends and family start coming out of the wood work, I never quite have enough. One quick fix for this is the addition of the some good old eggs. Prepare them to order, or make a big batch of scrambled eggs and add some salsa to stick with the Mexican theme!
