I love having a Baked Potato with Sour Cream, Chives, Bacon and Cheese smothered on top; but when I want to enjoy another one of these wonderful side-items I have to get up from my seat and do it again.
Instead of making 3-4 trips to the kitchen to make Baked Potatoes I came up with a clever way to make it into a casserole.
This delectable little dish can be served as the main entree or you can take those potato skins and fill them up with this stuff – you can get creative as much as you want.
You are going to fall in love with all of the different flavors of this amazing recipe.

Yum
Seems to be missing some steps
boiling in water adds more moisture to potato and baking has the tendency to remove some of the moisture .
