Better Than Take Out: Have You Tried This Copy-Cat Recipe For The General’s TSO Spicy Chicken?

Ingredients To Gather:

  • ½ cup all-purpose flour
  • ⅓ cup cornstarch
  • ¾ teaspoon baking powder
  • 1 teaspoon salt
  • 2 eggs
  • 3 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • ½ cup neutral oil (like peanut or vegetable)
  • 1 head cauliflower, cut into bite-size florets
  • 2 teaspoons sesame oil
  • 6 scallions, white part finely sliced, green part chopped into 1-inch pieces
  • 3 cloves garlic, minced
  • 1 tablespoon minced ginger
  • 5 small dried chiles (optional)
  • ¼ cup vegetable broth
  • ¼ cup soy sauce
  • 3 tablespoons rice vinegar
  • 2 tablespoons mirin
  • 3 tablespoons sugar
  • 1 tablespoon cornstarch
  • Sesame seeds, for garnish (optional)

Directions To Follow:

Start by making the batter. To do this, whisk together the flour, cornstarch, baking powder and salt in a small bowl. Next, whisk the eggs, soy sauce and vinegar together in a liquid measuring cup and then gradually add the egg mixture to the flour mixture, whisking the entire time. The batter should be thick but not too thick to dip the cauliflower in. You can add a little extra water if it's too thick.

Next, heat the oil in a medium-sized cast iron skillet. You can test to see if it's hot enough by dropping a tiny amount of batter into the oil. If the oil is hot enough, the batter will immediately start to sizzle and will float on the oil. Next, dip each piece of cauliflower in the batter, making sure it's fully coated, and then place each piece of battered cauliflower into the hot oil. Fry the cauliflower in the pan for about 4 or 5 minutes or until it's golden-brown on all sides. When it's done, remove from the pan and drain on a paper towel.

Now, heat the sesame oil over medium heat in a medium-sized pot. Then, add the chopped scallions, garlic, ginger and chiles to the pot and cook for 1 or 2 minutes or until fragrant. After this, add the broth, soy sauce, rice vinegar and mirin, bring to a simmer over medium heat, and then simmer for 5 minutes. Now, use a whisk to combine the sugar and the cornstarch in a small bowl, and then pour about one-fourth of the hot sauce over the mixture and whisk until it's smooth and has no lumps. Put the mixture back in the pot, bring to a simmer, and then stir in the large scallion pieces. Finally, cook the mixture, while stirring occasionally, for at least 7 to 9 minutes or until the mixture has thickened and has the flavor you want. Add the cauliflower to the mixture and toss to coat in the batter, and leave it in the pot for 4 or 5 minutes or until it's warm, and then serve with steamed rice. Garnish with sesame seeds.
