Breakfast On The Go

Step 1: Ingredients

3/4 cup oats
1 1/2 cup flour
1/3 cup sugar
1/4 teaspoon salt
2 teaspoon baking powder
1/4 teaspoon nutmeg
2 tablespoons melted butter
3 tablespoons applesauce
1 egg
1/2 cup orange juice
1/2 teaspoon vanilla extract
3/4 cup thawed blueberries,
1/2 cup yogurt chips
2 tablespoons butter
4 tablespoons brown sugar

Step 2: Making the Mix

In a bowl beat the egg and mix in the applesauce, orange juice and vanilla extract. Combine mixture with the rest of the ingriedients. Scoop out on to a greased baking sheet and brush the top with melted butted and brown sugar. Bake for 20-25 minutes.

 

A really cool trick is you can use different fruit to make a variety of flavors so you don't get burnt out. These are also perfect to make before a road trip or the night before a busy day of outdoor activities. We make them before we leave for horse shows because we can eat them on the way or during the day for a quick pick-me-up!
