
If you've never gone the sweet n' spicy route with your salsa, I'd highly recommend you try it. Believe it or not, the two contrasting flavors complement each other, making for an incredible, ever-changing taste with every bite.

Here Is What You Will Need:
- 2 lbs chicken breasts, each breast split in half horizontally
- 2 tablespoons Cajun seasoning
- 2-4 tablespoons vegetable oil
The Saucy-Salsa That's To Die For:
- 1 medium mango, peeled and diced
- 2 medium avocados, peeled and diced
- 1/2 jalapeno, minced
- 2 tablespoons minced fresh cilantro
- Juice from 1 lime
- 1/2 teaspoon minced fresh garlic
The Step By Step Instructions:
- Now, here's the best part: The whole cooking process only takes about a half-hour from start to finish, which is good because I doubt you'll be able to hold yourself back from eating some of the salsa before the chicken's done.
- Rub chicken breasts with cajun seasoning. Heat oil in a large skillet over medium-high heat until shimmery. Cook chicken breasts in batches, turning occasionally until chicken is golden brown on each side and registers 160F. Keep warm and set aside.
- Make the salsa: In a large bowl, combine all salsa ingredients. Season with salt and pepper to taste.
Serve salsa over warm chicken tenders.

If you've never done the avocado thing, be warned that it doesn't keep well overnight. That's just more incentive to finish the whole batch in one sitting!
