Chicken Enchilada Soup: A Warm Meal For Those Cold Nights

So how do we create this delectable masterpiece? Like so many other slow cooked meals, the prep time might even be less than the time it takes to actually eat the meal! As long as you have your ingredients ready to go, putting them altogether is a cinch!

Ingredients To Gather: 

  • 1 (19 ounce) can mild enchilada sauce
  • 1 cup milk, 1%
  • 1 cup chicken broth, low sodium
  • 1/2 cup shredded cheddar cheese
  • 1 (15 ounce) can black beans, drained, rinsed
  • 1 (14.5ounce) can diced tomatoes
  • 1 cup frozen corn
  • 1 teaspoon cumin
  • 2 (8 ounce) chicken breasts

Instructions To Follow: 

  1. Add the first 8 ingredients into the slow cooker.
  2. Place the chicken breasts right on top of the mixture.
  3. Cover and cook on high 4 to 6 hours.

Finished!

You can savor a nice bowl of chicken enchilada soup as an appetizer, snack, or even full meal. Just remember: the recipe serves 8. Try not to overdo it!
