
Carrot Cake is never complete without the tasty frosting that goes on the top, sides and middle. You are going to love the final result!

- Prepare the frosting while the cake is cooking. Place cream cheese and butter in a bowl and add confectioners sugar a little at a time, a sifter would probably work nicely. Add lemon and vanilla. I like my frosting to be room temperature it helps make frosting the cake easier!
- Once the cake is no longer hot place one layer on a serving dish, make sure to remove parchment paper! And frost. Line up the second layer and frost. Let the frosting set before cutting, otherwise your two layers might slide around.
If you decided to include the walnuts you could crush the remaining nuts into a fine powder and dust the top of your cake. Since I don’t use them I like to top mine with a few coconut flakes and now that my daughters are no longer afraid of a little carrot in their cake I like to decorate it with a few thin sliced carrots at well.
