
When my family and I vacationed in the Cayman Islands I had an amazing coconut chicken curry dish, this is from someone who thought they didn’t like curry. I imagined the ingredients for such a meal would be too exotic to recreate at home, until I saw this recipe for Slow Cooker Curry Cashew Chicken!
A slow cooker is a working mom’s dream in case you were curious.
Next I checked the ingredients, besides the curry powder or paste I was familiar with everything on the list. I thought curry was spicy when in fact it’s just a delicious seasoning that adds rich flavor, especially when mixed with coconut.
Once I got this little number set up in my well used crockpot, my house quickly filled with a wonderful aroma that sent me right back to the beach on the tip of that Caribbean island.
