4 large russet or Idaho potatoes (about 3 1/2 pounds), peeled

How To Prepare:
- Start out by preheating your oven to 200 degrees farenheight. While it's warming, keep the baking sheets in the oven as well.
- Grate onion and potatoes. Place them both in a strainer to remove excess liquid.
- Use a whisk to mix eggs and flour.
- Try and get as much liquid out of the potatoes and onions as possible. Then you'll want to add your egg mixture to the potato onion mixture in a large bowl. Season to taste with salt and pepper.
- Now that you have your potato mix prepped, heat up a skillet with oil for frying. Scoop amounts of mixture and drop on skillet, then pressing with a spatula to form a pancake. Cook on each side until golden brown. Transfer to paper towels and let rest while the extra grease is absorbed by the paper towels.
- Keep potato pancakes on baking sheets in oven to stay warm until ready to serve.
