
Cooking necessities:
- Crockpot (slow cooker) 10-12 qt
Ingredients:
- (2) 3-4 lb. corned beef brisket with spice packet
- (3) small head cabbage
- (8) medium carrots
- (3) large onions
- (4) large red potatoes
- (4) cups of water
Instructions:
- Wash and peel potatoes and then cut into 2 inch pieces, set aside.
- Peel the onions and wash them, then quarter your onions.
- Wash and chop carrots into medium pieces
- Rinse cabbage and cut into 6 wedges
- On a cutting board, trim the fat form the corned beef.
- Place crock pot on a sturdy surface that is heat resistant. Add in the water, cover and heat for 10 minutes on high
- While the water is heating up, open the seasoning packet and rub into the corned beef.
- Add the meat to the crock pot.
- Place carrots, potatoes, and onions over the meat and cover. Cook for 20 minutes.
- Add the cabbage on-top of the meat and vegetable mixture. Cover and cook on low heat for 6 hours or on high heat for 3 ½ hours.
- Once cooked, take meat out and place onto a cutting board. Cut and serve immediately with vegetable mixture.
