Add a pinch of salt and pepper, and then add 2 tbsp. of the pasta water and the butter. Turn off the heat once the butter has melted. Now, put the pasta back in the pan, and then add the lemon zest and the parmesan cheese and toss to coat. Add more of the pasta water as needed, 1 tbsp. at a time. Season to taste with more salt and pepper if needed.
