
Pumpkin is incredibly popular this time of year and now you can enjoy the season from your own kitchen. Here is a list of the ingredients you're going to need:
- 1 can (15 ounces) solid-pack pumpkin
- 1-1/2 cups sugar
- 1/2 cup fat-free milk
- 4 egg whites
- 1/3 cup canola oil
- 1/3 cup unsweetened applesauce
- 3-1/3 cups whole wheat flour
- 2 teaspoons baking soda
- 2 teaspoons ground cinnamon
- 1 teaspoon baking powder
- 3/4 teaspoon ground allspice
- 1/2 teaspoon salt
- 1 cup chopped pecans
Now time for the fun part! First get a bowl and gather your pumpkin, sugar, milk, egg whites, oil and applesauce and beat to blend well.
In a separate bowl you're going to combine the flour, baking soda, cinnamon, baking powder, allspice and salt.
The next step is to slowly beat this mix into your pumpkin mix until well blended.
Finally, simply stir in the pecans. Transfer the mixture to a loaf pan and bake at 350° for about an hour.
This serving will create 2 loafs for your enjoyment!
