Don’t Stress Over Dinner: Make This Slow Cooker Apricot Pork Tenderloin Instead!

You probably have all of the following in your kitchen already. That's what's so great about this dish — if you don't know what to make for dinner, just raid your pantry and you'll find you have everything you need for a simple and satisfying meal.

Ingredients To Gather:

  • 2 lb. Pork Tenderloin
  • 6 Carrots, peeled and chopped
  • 1 Onion, chopped (red or white)
  • 1 c. Chicken Broth
  • 18 oz. Apricot Jam
  • 2 T. Dijon Mustard
  • 1 T. Chopped Fresh Thyme
  • Salt & Pepper to taste

Directions To Follow:

  1. Begin by placing the carrots and onions in the crock pot, then seasoning the meat with salt and pepper and placing on top of the vegetables. Next, combine the broth, apricot, mustard and thyme and pour this over the meat. And that's it! All you have to do now is cook on low for 6 hours or until everything is tender.
